Since we had the day off for Buddha's birthday today, I wanted to try something new. Just maybe I could make something in my toaster oven.
Baking is very important to me. Even though we don't eat many baked things (my husband is mostly wheat free), I feel that bringing baked goods to events and giving as gifts is very important.
Now, my toaster oven is so gross. It's stained, and small, and I scrubbed it for hours when we moved in but it's still covered in black gunk. Yuck. Needless to say, I don't make many things in there. Maybe toast an occasional piece of bread. But, I decided to give it a go anyway. And TADA! It turned out great!

Here is what I did:
I used this recipe from allrecipes, but I cut it in half so that it would fit in my pan.
1. I covered the tray of my toaster oven with 2 layers of aluminum foil. I don't know if it made a difference, but it's what I did. I was afraid of the bottom getting too hot and burning. I turned on the toaster oven to preheat it.
2. I used a glass pan that fit perfectly into my toaster oven.
3. I put some oil in the pan and spread it around with a paper towel to keep the batter from sticking. It worked ok.
4. Pour the batter into the pan and cover the pan with 2 layers of aluminum foil.
5. I cooked the coffee cake at 10 minute intervals until it looked light and fluffy through the pan. (It was really cool to watch the cake rise!)
6. I removed the pan and removed the aluminum foil. The top was a bit spongy, so I put it back in uncovered for 3-4 minutes.
Note: Each toaster oven is different so you may need to experiment a little to see what works for you! Sometimes I alternate between oven on and oven off to give my food a break from intense heat.
