I have a couple of recipes to share today that work A-mazingly in my toaster oven.
The first one is for Banana Bread
My first time was slightly disastrous, but the second batch was perfect.
I used Mommy's Banana Bread from allrecipes.com
Just as a note for toaster oven bakers: I do not recommend using the cinnamon and sugar to "flour" the pan. I tried that with my first loaf, and the sugar just burned terribly. Also, when I cook the bread, I usually have to wait until it is cool to eat it. The toaster oven cooking process makes the bread too moist when it is still warm.
The second recipe is for Quiche!!!
Um.. I don't really like quiche, but my husband does!
I used the Quiche recipe from allrecipes.com
Some notes on the recipe: I used whatever cheese, veggies, and meat I had on hand. In the picture above, I used spinach and olives. Another time, I used bacon and broccoli. Both were great! Just add them in where the recipe says "ham". My husband is allergic to wheat, so I made this WITHOUT the crust. The cheese got crispy around the edges and along the bottom which we thought were great.
Notes on cooking in the toaster oven: Everything I cook I cover with foil. Sometimes this keeps things from getting that crispy top on it. The first time I made this quiche, I twas a little too watery. The second time, after the quiche was finished cooking completely, I turned off the oven and let quiche sit in the hot oven uncovered for 5-10 minutes. This helped to evaporate some of the extra liquid.
