I realized that I never posted about my completed brownie search! Not long after this post where I turned some brownies into cake, my friend sent me an amazing brownie recipe. It is very perfect : )
Unfortunately, I don't have pictures with me now, but I thought I would share the recipe with you. It doesn't make the thick gooey brownies that I usually get from a box mix (I think because the size of my pan makes them just a little too tall), but they make up for it in deliciousness!
A-mazing Brownies
1 C butter
1 C cocoa
2 C sugar
4 eggs
1 tsp vanilla
1 C flour
1/4 tsp Baking powder
1/4 tsp salt
1 C cocoa

In microwave, melt butter.
Add sugar and cocoa until well incorporated. (let cool just a bit before adding eggs so they don't scramble!;)
Add remaining ingredients and stir until fully incorporated.
Pour into greases glass dish.
Bake at 350 degrees F or 176 degrees C for 25-30 minutes. Insert toothpick or chopstick to check for doneness. If browning starts to occur early, just cover with foil and keep baking! :)

Note: I use a half recipe for my pan size. Baking in my toaster oven, I always cover everything with aluminum foil from the beginning. If I want the top to be a little crunchy, I take the foil off for the last 5 minutes of cooking. I also can't control the temperature in my oven, but it works just fine.
